Hummus is probably one of the easiest recipes to make that looks more complicated than it really is. I made this black bean hummus over the weekend from this recipe I found on WholeFoods and it was absolutely delicious. With Cinco de Mayo right around the corner, this recipe would be the perfect treat for any gathering you might have planned (or whenever, really).
Instead of canned black beans (which have tons of unhealthy sodium) I used organic dry black beans and simply left them soaking over night. Dry beans can be pretty tricky to cook, many times it requires up to 6 to 8 hours!! So instead of using a pot, I dusted off my crock pot and used that instead. I cooked them on Low for 8 hours or you can also use the High setting and cook for 3-4 hours.

Here's a picture of the ingredients I used (I also used cilantro). I always try to make sure everything I use is organic (from the lemons to the garlic).
Do you have any fun plans tomorrow for Cinco de Mayo?
